Bright Eye Papaya Salad

For the salad
AmtUnitIngredients
1 medium size Papaya
1 packet100 grams Orange jelly
1teaspoonlemon juice
1teaspoonsugar
1/2teaspoonsalt
1tablespoon Celery chopped
1  Carrot grated
2tablespoonsCapsicum chopped
3/4teacup Cabbage grated
  lettuce leaves and grated carrots for garnishing
For the Thousand Island dressing
AmtUnitIngredients
3/4 teacup thick fresh low fat yogurt
1 teaspoon mustard powder
3 teaspoons sugar
2 tablespoons tomato ketchup
1 teaspoon chilli sauce
2 tablespoons onions chopped
2 tablespoons capsicum chopped
1/2 teaspoon green chillies chopped
Directions:
1. For the dressing, mix all the ingredients thoroughly.
2. For the salad, peel and halve the papaya.
3. Dissolve the orange jelly in 1 teacup of boiling water. Cool and add the lemon juice, sugar and salt.
4. Put to set in the refrigerator.
5. When partially set, add the vegetables and mix well.
6. If you like, add a little salt and sugar. Fill the papaya halves with this mixture and put to set in the refrigerator.

Serving ideas:
Just before serving, decorate with lettuce leaves and carrots. Serve cold with the dressing.

Notes:
An excellent source of Vitamins A and C. Helps to retard degeneration affecting your eyes. Vitamin C helps to keep the eye lens clear.
